Sweet potato Breakfast casserole
Good morning, lately I have been trying really, really hard to go more paleo- no not a diet a simple lifestyle change! Well this breakfast casserole is my favorite from a kid although I switched out some ingredients to make it more "paleo", yes I love cheese so technically it's not but its healthy and easy 🤗!

Sweet Potato Breakfast Casserole




Breakfast casserole-

Ingredients:
1lb ground sausage ( browned and drained)
1 sweet potato- peeled
1/2 white onion
1/2 block of your favorite cheese (I used cheddar)
7 eggs
1/2 cup milk
Salt and pepper
1 teaspoon dill
1 teaspoon parsley

Instructions:
1. Brown and drain sausage. In a baking dish lightly butter or use non-stick cooking spray. Use a shredder and shred the cheese and sweet potato. Chop onion. Set all aside. Take the eggs and milk and whisk together adding some salt and pepper.

2. Preheat oven to 400 degrees

3. Mix in a big bowl all of the ingredients, including remaining spices. After they are a mixed put Ina glass baking dish and bake for 60 minutes or until eggs are cooked through.

Thai Sweet chili chicken

I am sure this is no where close to authentic- but for something sweet and spicy this is the perfect meal!

Thai Sweet Chili Chicken


Ingredients:
1/2 head of cabbage (chopped)
1 red bell pepper (thinly sliced)
1 Yellow Onion ( sliced) (Honestly a red onion would be yummy but- I'm lazy and didn't want to go to the store)
3 Chicken Breast  - Sliced
1 8oz jar of Sweet Thai Chili Sauce
2 tablespoons Butter ( I just take a big spoon a scoop- its probably more like 3 in my house)
2 tablespoons olive oil
1 teaspoon Gram masala Curry Spice
Salt and pepper to taste
1 teaspoon dill
1 teaspoon parsley flakes


I paired this with Basmati Rice- Seasoned lightly with dill, parsley, salt, and pepper!


1.  Place 2 tablespoon of olive oil on the bottom of a large pan, chop all of the vegetables and start cooking them over medium heat. Salt and Pepper lightly
2.  When the vegetables have began to wither down some (mostly the cabbage), Make a circle in the  middle of the pan, add butter in the middle and then slice your chicken and place on the butter.  Now add all the spices. Let this cook until the chicken is done.
3.  Turn up the heat a little and add the whole bottle of Sweet Thai Chili Sauce, you want the chili sauce to almost bubble, that way it coats the chicken nicely and sticks to it.


Once you have the chicken coated and all mixed in, plate it over some nice warm Basmati rice and enjoy!!

School is in full swing! PTO MOMS BEWARE!

Well a part of me is glad school is back in full swing the other half of me is crying inside.  This year I have taken on co-vice president of PTO and being room parent coordinator!   I truly enjoy being at the school on my days off, these kids are wonderful!  I am sad we had to leave our teacher from last year but out new one is panning out to be pretty great too!  I want to help all schools to at their full potential to raise money, so lets just get one thing straight! I HATE FUNDRAISERS, I know, I know they are a necessary evil to ensure our kids get the proper learning materials but I swear I will use the next fundraiser book that comes home as a fire starter!! This is a few things our school is doing this year to help boost the amount of money that PTO raises!

This year we have joined what is called amazon smile. 

Amazon smile is a wonderful way to help earn cash back for your school.  We had our treasurer sign us up and we spread the word like wild fire! Hopefully this pans out to be profitable.

COMMUNITY REWARDS

IF you have a local grocery story like we do in Kansas see what they offer for community rewards!  We are able to like our Dillon's Cards to an account set up for our school and they will give back money !! WHOOP WHOOP free money $$


BOX TOPS FOR EDUCATION

Last but not least and MY FAVORITE is box tops for education! I know 10 cents for a piece of card board but my goodness those 10 cents add up!! We made a grade by grade challenge to see what grade level can collect the most each semester!  We got baggies and the kids collect them and put them in the library when they have collected 10 and they grab another baggies and start collecting more!  A town in Nebraska raised alone $100,000 last year in box tops!!!

Last but not least we are also wanting to give parents who don't have time to do all the fundraising a opt out form!  This has actually worked great and 100% profits are coming back to the school!
